This alfredo sauce without cream has been a staple in my family for several generations. It’s so easy to make, creamy, and packed with flavor. It goes great with pasta or bread, and is amazing as a sauce for pizza.
While, I have no idea who originally came up with this recipe, we love it so much I just had to share it. Plus I’ve not seen any other alfredo sauce recipe similar to this one. All you need are seven simple ingredients, (three of those are salt, garlic powder, and parsley, which could be summed up as garlic salt… so the main sauce is really only 4 ingredients.)
What you need to make alfredo sauce without cream
To make this recipe you’ll need:
- Butter – we only use salted butter, but you can opt to use unsalted if you prefer
- Cream cheese – Philadelphia cream cheese just can not be beat. If you have found a homemade cream cheese recipe that compares let me know.
- Parmesan cheese – growing up we always used the Kraft parmesan cheese. If that’s what you have that will work perfectly. However, if you can, buy a block of real parmesan cheese and grate it up at home. Grating your own cheese saves a few dollars. The real stuff will always be better than the highly processed foods.
- Milk – for the best results use whole milk in this recipe. 2% does work as well if that’s what you have.
- Salt, garlic powder, and parsley (garlic salt) – You can make up your own garlic salt blend, as I do in this recipe, or you can buy garlic salt premade.
The process
I’d love to write a lengthy description here to give you all the details you’ll need to make this alfredo sauce without cream, but it’s just too simple…
First, you’ll need a medium sized saucepan and a whisk. Then, gather together all your ingredients and dump everything into the pot. Set it on the stove over medium heat and whisk until smooth.
Yup… That’s it, folks.
Keep stirring until everything has combined and the sauce is smooth. The cheese may take a few minutes to fully melt, so if it looks a little stringy still, bump up the heat a little and keep stirring. It will smooth out beautifully. Taste for seasonings and add more if needed.
Also, you’ll have to try dipping bread into this sauce… it’s irresistible.
How to serve alfredo sauce
Growing up, my mother always made a single batch of sauce to feed our family of seven. For my family, I like to increase the sauce by half because who doesn’t love saucy noodles? Plus, if there’s leftover, you can have a midnight snack!
Obviously we most often use this alfredo sauce to go over some pasta. But we’ve also made delicious flat bread pizza’s using this as the sauce. It put any restaurant’s chicken alfredo pizza to shame :D.
This could also be served along side some bread sticks, or even with some garlic knots. Once you try this you won’t be able to go back to the typical alfredo sauces out there. Or maybe I’m just biased since I grew up eating this? Who knows… I think it’s pretty delicious.
Variations to this alfredo sauce without cream
You can go to town seasoning this sauce as you like. Here’s some suggestions to get your culinary creativity started:
- Melt the butter in the saucepan first, then sauté some minced garlic for about thirty seconds before adding remaining ingredients.
- Add Italian seasonings to the sauce along side the garlic salt. These herbs could be rosemary, thyme, marjoram, sage, savory, basil, and oregano. I’m sure there are more options, use your favorite Italian seasoning blend.
- In the pot fry up some bacon, leaving about 1/4 cup of the grease in the pot. Then add half the butter the recipe calls for along with all the other ingredients. Chop up the bacon into bits and add it to the sauce 😀
- You could sneak in some leafy greens to the sauce as well. Spinach, chopped nice and small, would be a great addition, and if your kids ask, just tell them it’s parsley 😉

Alfredo Sauce Without Cream
This alfredo sauce uses four simple ingredients, plus some seasonings, to make the most flavorful alfredo sauce without cream you'll ever try.
Ingredients
- 1 cup whole milk
- 8 oz cream cheese
- 1/2 cup freshly grated parmesan
- 1/2 cup butter
- 1 tsp garlic salt, or to taste
Instructions
- Dump all ingredients into a medium sized sauce pan. Cook over medium heat and stir using a whisk until smooth.
- Add aditional seasonings if needed.
- Serve with pasta or bread.
Notes
You can substitute the freshly grated parmesan cheese for Kraft parmesan if that is all you have.
To make your own garlic salt, mix together 1/4 tsp garlic powder, 1/2 tsp parsley, and 1/2 tsp salt. From there adjust to your tastes.
The cheese takes a few minutes to fully melt. If after a few minutes the sauce is still stringy, increase the temperature just a bit and continue whisking. It should smooth out quickly.
This sauce will make enough to cover 1lb of pasta, however, we love plenty of sauce in our house, so I usually increase this recipe by half.

Store leftovers in an airtight container in the fridge for several days. Reheat in a pot on the stove over medium heat or until the sauce is melted and warmed through.
