This yogurt flatbread recipe is so easy to whip up. Because it doesn’t use yeast, this bread recipe can be mixed together and on your plate in less than thirty minutes. We love to use this flatbread for everything from tacos to pizza.
Did I mention it’s also really soft???
Ingredients for this yogurt flatbread
- All purpose flour. I only use organic, unbleached flour for my baked goods. The bleached flour is fine for crafts like playdough and salt dough ornaments, but it’s not something I want to feed my kids. It’s not much more expensive than the bleached flour anyways.
- Baking powder. Since we won’t be using yeast, the baking powder helps give this bread a little fluff.
- Sea salt. I highly recommend spending the money for good quality salt. Our body needs salt in order to regulate blood pressure and keep us well hydrated. Salt does so much for our body, if you can afford it we love Redmond’s Real Salt.
- Olive oil. This helps to give a softer texture to the dough.
- Honey. Raw local honey is truly a treasure from heaven. It not only tastes great and is good for you, but it’s also a great way to support local agriculture.
- Yogurt. The acidity in the yogurt helps to break down the gluten in the flour giving the bread a softer and chewier texture. We use whole fat yogurt that we make at home.
- Water. Just a little goes a long way in this recipe.
All of these ingredients are super simple and should be easy to access no matter where you are.
How to make yogurt flatbread from scratch
Making any kind of bread is a very simple process. As you try more recipes you’ll find that the processes are all very similar and use all the same ingredients in slightly different variations.
First we need to make the dough.
We are going to mix together the dry ingredients first. The flour, baking powder, and sea salt. Once we’ve done that we are going to make a well in the flour where we will add the wet ingredients, oil, honey, yogurt, and water. We’re going to mix this until it forms a cohesive ball.
It will look really shaggy at first and may seem like it won’t come together, just keep mixing it in, it will come together. You can mix by hand in a large bowl or you could use a stand mixer like a Bosch or Kitchen Aid. Once the dough forms a ball it will be a bit sticky, but should be easy enough to work with if you lightly dust your hands with flour.
Next is kneading. You can knead directly in the bowl or on a counter. Lightly flour a clean work surface and knead the dough for 5-10 minutes. After that, cover the dough and let it rest for about 10 minutes. I like to use this rest time to clean up a bit and prep the stove for cooking the bread. Or if I’m planning on using the dough for pizza crusts, I’ll prepare the pizza toppings during this time.
Shaping the dough
After the dough has rested for about ten minutes we are going to divide the dough into 6 equal-ish parts. I usually double this recipe, and if you decide to do the same you will divide it into about 12 parts. If you are a bit of a perfectionist here you can totally bring out your kitchen scale to make sure all parts are the same size. That’ll be somewhere around 1.8 oz each.
Shape each piece into a ball. I like to do this by gently kneading the dough in my hands to form a tight shape with a smooth top. Once all the dough is formed into balls, it’s time to begin rolling out the dough into circles. Each circle will be about 5-6 inches in diameter.
Cooking the flatbread
Cooking flatbread is as easy as cooking pancakes, or tortillas. I like to use cast iron pans for this or my griddle if I’m in a hurry. Any pan will suffice for this. Heat the pan over medium high heat and grease with butter or oil. Avocado oil or olive would be fine. If you have lard or tallow those would be great options as well.
Once the pan is hot, place the rolled out dough onto the pan. Cook for about 2-3 minutes on each side. Repeat that process until all the bread is cooked, adding more butter or oil when needed. Seriously, it’s so simple you can’t fail!
Turning this yogurt flatbread into pizza crust
We love a good flatbread pizza and this recipe works great in that regard. If you want to turn this into pizza crust add about 1/2 tsp each of garlic powder and basil to the dry ingredients. You don’t have to but it makes the pizza more official 😁.
After the dough has rested you can simply roll out the whole dough or divide the dough into equal parts. When making pizza for the whole family, I’ll roll it out as one big pizza. If it’s just for the boys lunches then I’ll divide the dough and the kids think they are getting something extra special.
After rolling out the dough, prick the dough with a fork all around. Add your pizza toppings and cook at 400°F for about 15 minutes for the small pizza’s or 20 minutes for a whole pizza. The dough is really soft so this makes a great recipe for family members dealing with dental troubles.
Make it your own

- 2 cups all purpose flour, organic unbleached
- 2 tsp baking powder
- 1 1/2 tsp sea salt
Wet Ingredients
- 1/2 cup whole fat yogurt
- 1/4 cup water
- 2 tbsp olive oil
- 2 tsp honey
Instructions
- In a large bowl, or bowl of a stand mixer, add flour, baking powder, and sea salt.
- Make a well in the middle of the flour mixture. Add yogurt, water, olive oil, and honey
- Mix until the dough forms a cohesive ball. Knead for 5-10 minutes either in the bowl or on a lightly floured surface.
- Cover and let rest for 10 minutes
- Divide the dough into 6 equal parts. Shape each into a ball. Roll each ball into a circle about 5-6 inches in diameter.
- Heat an 8 inch skillet over medium heat. Grease the pan with butter or other cooking fat. Cook flat bread for 2-3 minutes on each side. Add more butter to pan as needed.
- Serve warm. Store leftovers in an airtight container either at room temperature or in the fridge.
Notes
After the dough has rested, you can easily turn this dough into a flatbread pizza. You can do either one large pizza or continue through step 5. Then add your pizza toppings and bake at 400°F for about 15-20 minutes.
To make the cooking time go faster you can use a griddle or several pans all at once.
It is easy to double this recipe, which is what we usually do in our home to make sure there's enough to go around.
