These muffins are so simple to make and use only whole ingredients for a nourishing treat or snack. They are so yummy you could even use them as a dessert!
1mediumzucchini, gratedor two small, about 1 1/2 - 2 cups
1bananaoverripe
220gwhole wheatabout 1 2/3 cup
1tspbaking soda
1tsp baking powder
1/2tsp salt
30gcocoa powderabout 1/3 cup
1/2cupmaple syrup
1/2cupdark chocolate chipsor chocolate of choice
1/4cupyogurt
Instructions
Preheat oven to 350F and grease your muffin tin.
Grate zucchini and mash banana. Do not strain zucchini.
In a mixing bowl combine flour, cocoa powder, salt, baking powder and baking soda. Whisk thoroughly.
Add grated zucchini, mashed banana, maple syrup, and yogurt to dry ingredients. Combine. Batter will be thick.
Fold in chocolate chips.
Fill muffin tin 3/4 of the way full with batter. A small cookie scoop makes quick work of this step.
Bake mini muffins for 10-15 minutes and full sized muffins for 20-25 minutes or until a toothpick comes out clean.
Notes
Oven temperatures vary as do the moisture in zucchini's. Depending on those factors your muffins may take more or less time to bake. Store leftovers in the fridge for the best flavor over time... if they last long enough for there to be leftovers.
