Healthy Chocolate Zucchini Muffins
These muffins are so simple to make and use only whole ingredients for a nourishing treat or snack. They are so yummy you could even use them as a dessert!

- 1 medium zucchini, grated or two small, about 1 1/2 - 2 cups
- 1 banana overripe
- 220 g whole wheat about 1 2/3 cup
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 30 g cocoa powder about 1/3 cup
- 1/2 cup maple syrup
- 1/2 cup dark chocolate chips or chocolate of choice
- 1/4 cup yogurt
Preheat oven to 350F and grease your muffin tin.
Grate zucchini and mash banana. Do not strain zucchini.
In a mixing bowl combine flour, cocoa powder, salt, baking powder and baking soda. Whisk thoroughly.
Add grated zucchini, mashed banana, maple syrup, and yogurt to dry ingredients. Combine. Batter will be thick.
Fold in chocolate chips.
Fill muffin tin 3/4 of the way full with batter. A small cookie scoop makes quick work of this step.
Bake mini muffins for 10-15 minutes and full sized muffins for 20-25 minutes or until a toothpick comes out clean.
Oven temperatures vary as do the moisture in zucchini's. Depending on those factors your muffins may take more or less time to bake.
Store leftovers in the fridge for the best flavor over time... if they last long enough for there to be leftovers.
