Equipment

  • Pressure Cooker or slow cooker

Ingredients

  • 3 lb pork roast shoulder/butt
  • 1/4 cup liquid smoke
  • 1 tbsp sea salt
  • 1 medium head of cabbage

Instructions

  • Place pork roast, liquid smoke and salt into the pot of your pressure cooker. Secure the lid and insure the pressure valve is sealed. Select pressure cook and adjust time to 2hr 30 minutes for thawed roast or 3 hours for frozen roast.*
  • When pressure cook time is finished, adjust the pressure valve to vent. While the pressure is releasing, go ahead and chop your cabbage.
  • With the pressure released, remove the lid and add cabbage to the pot. Break apart the pork roast and stir in the cabbage using tongs or a fork. Select saute function and cook the pork and cabbage for about 10 minutes or until the cabbage is cooked to your liking. Adjust salt if needed. Turn off saute function.
  • Serve over rice or use for pulled pork sandwiches.

Notes

*If cooking from frozen, add 1/2 cup of water to the pot to make sure your pressure cooker seals.
To make this in a slow cooker, place pork, liquid smoke, and salt into the cooker and set on low for 8 hours or up to 24 hours. Add cabbage 2 hours before dinner time.
Store leftovers in an air tight container in the fridge for up to a week.
