Chicken seasonings
- 4 chicken breasts cubed
- 1 tsp sea salt
- 1/2 tsp parsley*
- 1/2 tsp oregano*
- 1/2 tsp basil*
- butter or avocado oil for frying
Sauce
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup freshly grated parmesan
- 2/3 cup sundried tomatoes with the oil
- 5 cloves garlic minced
- 1/3 cup all purpose flour can use corn starch, arrowroot starch, or tapioca starch instead
- 8 oz spinach
- red pepper flakes to taste
Prepare the chicken
In a medium mixing bowl add cubed chicken breasts, salt, and herbs. Stir to evenly coat the chicken.
Over medium high heat melt some butter into a large, high sided pan, just enough to coat the bottom. Add cubed chicken to the pan, one layer at a time. Fry for 2-3 minutes then flip. Cook for another 2-3 minutes or until a light golden sear is formed on each side.
Remove chicken from pan and repeat with remaining chicken pieces until all of it is seared. The chicken will not be fully cooked at this point.
Make the sauce
Continuing with the same pan we used for the chicken add sundried tomatoes with the oil. Saute for a minute or two and then add garlic. Saute for an additional 30 seconds.
Add flour to the tomatoes and garlic in the pan and stir to combine. Cook for 2-3 minutes stirring continuously.
Add chicken broth 1 cup at a time, fully incorporate each cup before adding the next.
With all the broth added, mix in the heavy cream and grated parmesan cheese.
Finishing up
Return chicken to the pan with our gravy. Bring mixture to a boil, cover and reduce heat to medium. Simmer for 10 minutes.
Add spinach and cook until wilted, 2-3 minutes. Remove from heat. Sprinkle red pepper flakes over the top and serve immediately.
