Marry Me Chicken Recipe

Ingredients
  

Chicken seasonings

  • 4 chicken breasts cubed
  • 1 tsp sea salt
  • 1/2 tsp parsley*
  • 1/2 tsp oregano*
  • 1/2 tsp basil*
  • butter or avocado oil for frying

Sauce

  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated parmesan
  • 2/3 cup sundried tomatoes with the oil
  • 5 cloves garlic minced
  • 1/3 cup all purpose flour can use corn starch, arrowroot starch, or tapioca starch instead
  • 8 oz spinach
  • red pepper flakes to taste

Instructions
 

Prepare the chicken

  • In a medium mixing bowl add cubed chicken breasts, salt, and herbs. Stir to evenly coat the chicken.
  • Over medium high heat melt some butter into a large, high sided pan, just enough to coat the bottom. Add cubed chicken to the pan, one layer at a time. Fry for 2-3 minutes then flip. Cook for another 2-3 minutes or until a light golden sear is formed on each side.
  • Remove chicken from pan and repeat with remaining chicken pieces until all of it is seared. The chicken will not be fully cooked at this point.

Make the sauce

  • Continuing with the same pan we used for the chicken add sundried tomatoes with the oil. Saute for a minute or two and then add garlic. Saute for an additional 30 seconds.
  • Add flour to the tomatoes and garlic in the pan and stir to combine. Cook for 2-3 minutes stirring continuously.
  • Add chicken broth 1 cup at a time, fully incorporate each cup before adding the next.
  • With all the broth added, mix in the heavy cream and grated parmesan cheese.

Finishing up

  • Return chicken to the pan with our gravy. Bring mixture to a boil, cover and reduce heat to medium. Simmer for 10 minutes.
  • Add spinach and cook until wilted, 2-3 minutes. Remove from heat. Sprinkle red pepper flakes over the top and serve immediately.

Notes

*In place of individual herbs, you can use 1 tbsp Italian seasonings, or a blend of your favorite Italian herbs.
