Marry Me Chicken Recipe

This marry me chicken recipe has become a favorite in our home. Made with nourishing chicken bone broth, tomatoes, and spinach, this recipe is nourishing and delicious.

You may notice there’s no spinach in the above photo. I’m totally kicking myself for running out right before I went to make this. Oh, well 🙂

  • Chicken breast – this recipe has also been made with bone in skin on thighs and drumsticks. It’s so delicious but it does take a bit longer to cook. Here I’ll use cubed chicken breasts. There’s something about cutting meat into bite sized pieces that makes it go further.
  • Chicken Bone Broth – this ingredient really is the nutrient powerhouse in this meal. We make it ourselves to save money and ensure the best quality.
  • Heavy cream
  • Freshly grated parmesan – buy the cheese in a block to save money and get a better melt out of the cheese.
  • Sun dried tomatoes with oil – we want the oil as well as the tomatoes. This will serve as the fat for our roux.
  • Minced garlic – measure this with your heart, we typically use 4 or 5 cloves for our meals, but we are working with smaller soft necked garlic varieties. If you have hard neck garlic in your area the cloves will be much larger so you may need only one or two.
  • Flour – for thickening our broth into a gravy. All purpose is all you need here. If you do need a gluten free alternative, arrow root starch or tapioca starch will work well.
  • Spinach – you can use any mild flavored green you have growing in your garden.
  • Sea Salt – we always use Redmond’s unrefined mineral salt. It’s so tasty and so good for you too.
  • Your favorite blend of Italian Seasonings – we use parsley, basil and oregano in our kitchen the most.
  • Butter or avocado oil – we’ll need a bit of this for searing our chicken
  • Red pepper flakes – this is optional to sprinkle on after the food has finished cooking.

The process

First we are going to add our cubed chicken, salt and herbs to a medium sized mixing bowl. Stir to evenly coat the pieces of chicken. In a large high sided skillet over medium high heat add the oil or butter. Place the chicken in the pan one layer at a time. Cook for 2-3 minutes on each side until the top and bottom have a nice sear. Remove the chicken from the pan.

We are not fully cooking our chicken during this step. Repeat this process until all the chicken has been seared.

Now, working in the same pan, add in the sun dried tomatoes with their oil. Pack the tomatoes into your measuring cup and pour the oil to fill in any gaps. Saute for a couple of minutes, then add in your minced garlic.

After thirty seconds or so, add in the flour. Stir constantly to make sure the oil and flour have incorporated and don’t burn. Cook for no more than two minutes before adding in the broth.

Add the broth one cup at a time, fully incorporating that cup before adding the next. Stir throughout each addition. Once all the broth has been added, mix in the cream and parmesan cheese. When measuring the parmesan, we also want it gently packed.

Bring the mixture to a boil and reduce heat to medium. Add chicken back to the pan. Cover and simmer for ten minutes. Add in the spinach and cook until wilted, an additional two minutes or so. Sprinkle some red pepper flakes over the top and serve with some pasta or rice. We love this with rice, the gravy is so good. 🤤

Ingredients
  

Chicken seasonings
  • 4 chicken breasts cubed
  • 1 tsp sea salt
  • 1/2 tsp parsley*
  • 1/2 tsp oregano*
  • 1/2 tsp basil*
  • butter or avocado oil for frying
Sauce
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated parmesan
  • 2/3 cup sundried tomatoes with the oil
  • 5 cloves garlic minced
  • 1/3 cup all purpose flour can use corn starch, arrowroot starch, or tapioca starch instead
  • 8 oz spinach
  • red pepper flakes to taste

Method
 

Prepare the chicken
  1. In a medium mixing bowl add cubed chicken breasts, salt, and herbs. Stir to evenly coat the chicken.
  2. Over medium high heat melt some butter into a large, high sided pan, just enough to coat the bottom. Add cubed chicken to the pan, one layer at a time. Fry for 2-3 minutes then flip. Cook for another 2-3 minutes or until a light golden sear is formed on each side.
  3. Remove chicken from pan and repeat with remaining chicken pieces until all of it is seared. The chicken will not be fully cooked at this point.
Make the sauce
  1. Continuing with the same pan we used for the chicken add sundried tomatoes with the oil. Saute for a minute or two and then add garlic. Saute for an additional 30 seconds.
  2. Add flour to the tomatoes and garlic in the pan and stir to combine. Cook for 2-3 minutes stirring continuously.
  3. Add chicken broth 1 cup at a time, fully incorporate each cup before adding the next.
  4. With all the broth added, mix in the heavy cream and grated parmesan cheese.
Finishing up
  1. Return chicken to the pan with our gravy. Bring mixture to a boil, cover and reduce heat to medium. Simmer for 10 minutes.
  2. Add spinach and cook until wilted, 2-3 minutes. Remove from heat. Sprinkle red pepper flakes over the top and serve immediately.

Notes

*In place of individual herbs, you can use 1 tbsp Italian seasonings, or a blend of your favorite Italian herbs.
