Mixed Berry Baked Oatmeal

This hearty and delicious breakfast comes together with only five minutes of hands on time. Your family will love this nourishing, hearty breakfast.

- 3 cups oats rolled or old fashioned
- 3 large eggs
- 2 cups mixed berries
- 1 1/4 cup milk
- 1/3 cup maple syrup or honey
- 2 tsp pure vanilla extract
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
- butter or other oil for greasing baking dish
Preheat oven to 375F
Combine all ingredients in a large bowl and mix until combined.
Grease 8x8 baking dish, or 8" cast iron pan with butter or other cooking fat.
Bake for 40-50 minutes or until the eggs are cooked to your liking and the oatmeal is golden brown.
Serve warm with a dollop of whipped cream, yogurt or a splash of milk. Or, simply enjoy as is.
You can add any variety of fruits your heart desires, fresh or frozen.
We like to add 1/4 cup of chia seeds from time to time for extra nutrients. Feel free to make other additions to this baked oatmeal like chopped nuts, dates, or even chocolate chips.
Store leftovers in an airtight container in the fridge for 3-5 days.
