Ingredients for mixed berry baked oatmeal

- Oats – use rolled or old fashioned oats in this recipe.
- Eggs – eggs from pastured hens are the most nutritious but they are expensive. Use what you can afford. If you have picky eaters, this is a great recipe to get them eating more protein.
- Milk – you can use any kind of milk you prefer. Even the nut or oat “milks” if you can’t have dairy.
- Pure maple syrup – just a bit of this gives the oats a slightly sweet taste that helps persuade your picky eaters to try this.
- Mixed berries – we use a blend of blueberries, blackberries, and raspberries. Feel free to use any berries you have on hand, especially those which are in season.
- Pure vanilla extract – please don’t use that imitation stuff. The real stuff is the only thing you should consume and it’s super affordable if you make it yourself.
- Baking powder
- Sea salt – we love Redmond’s Real Salt. It’s packed with minerals our bodies need, plus it’s so delicious.
- Ground cinnamon – this is optional, but it really rounds out the flavor of this dish. Bonus, it also gives the house a nice smell.
- Chia seeds – I like to add this from time to time for extra nutrients.
How to make baked oatmeal
This is such an easy recipe to whip up, it’s definitely one of my favorite on busy mornings. Especially when I didn’t prep overnight oats or granola and yogurt. These crepes are great for special occasions but I don’t always want to stand around a stove for half an hour… 😅
Preheat your oven to 375F and grease your baking dish with butter, lard, or other cooking fat. An 8×8″ casserole dish or an 8″ cast iron pan are perfect for this.

Add all of your ingredients into a large mixing bowl and mix until everything is fully combined. Dump into the cooking vessel of your choice and bake for 40-50 minutes or until it’s done to your liking. Set with golden edges is what you want to look out for.

We prefer to serve this warm, however, if you chill it you’ll end up with granola bars which makes for a great snack. This mixed berry baked oatmeal goes great with yogurt, milk, or whipped cream. You could also drizzle a little honey over the top once it’s done baking for a little extra nutrients and sweetness. Of course, use raw local honey if you want the nutritional benefits.
If you are left with any leftovers, store them in the fridge. You may find you prefer this mixed berry baked oatmeal chilled. It’ll stay good for up to five days. Simply reheat in the microwave if you’d like. If you give this recipe a try let me know what you think in the comments below. I hope you all love it as much as we do!
Happy baking 😊
