Healthier Smore’s Pizza Recipe

Smore’s pizza is one of my favorite desserts of all time. But, they aren’t really healthy so it had been a long time since I’d had one until I made my lazy baker thin crust pizza. That dough was no doubt the perfect vessel for a smore’s pizza and I knew it could be made healthier. This smore’s pizza recipe uses date sugar for the filling. Then add your chocolate of choice and some homemade marshmallow fluff 🤤 Absolute perfection!

Ingredients for healthier smore’s pizza

For an in depth look at the dough, check out this dedicated post I made for it. A long ferment makes this dough so flavorful, plus super easy 🙂

For the dough you’ll need:

  • Flour – organic, all purpose flour
  • Water
  • Yeast – we use active yeast, but instant works too. Or, add in a bit of your sourdough starter and reduce the water just a smidge
  • Salt – we use Redmond’s Real Salt. It’s amazing and an American company. We love supporting American made as much as possible.

For the filling:

  • Butter – we prefer salted butter, but no judgement if you prefer unsalted.
  • Date sugar – I haven’t tried making this smore’s pizza with fresh dates but that may need to be an upcoming experiment.
  • Oats – rolled or old fashioned. Quick oats will work too, but they are a bit more processed.
  • Chocolate chips – use what you love. We really like the Nestle organic dark chocolate. It’s dairy free and only has three ingredients.

When your pizza is out of the oven, top it off with a drizzle of marshmallow fluff. I love this recipe from Plain and Simple Home, it’s divine and makes the perfect finishing touch for this smore’s pizza. Plus, no corn syrup!

How to make smore’s pizza

Make the dough

First off, make your dough. This dough recipe is best when given plenty of time to ferment. I let it sit in the fridge for up to a week before baking, but eight hours at room temperature is plenty. Start the dough in the morning if you’d like to enjoy this the same day.

This dough recipe makes enough for two pizza’s. You can save the other half for later, or make a traditional pizza or breadsticks.

After rising for eight hours or more, turn out the dough onto a floured work surface. Wet your hands so they don’t stick and shape the dough into a ball. Divide in half. Shape each half into a ball. Set aside one and working with the other, punch down the dough in the middle to form a disc. The edges should be slightly thicker than the center. Cover and let rest while you prepare the toppings and your cast iron/pizza stone.

Make the filling

Add softened butter, date sugar, and oats to a small bowl and mix together. Grease your cast iron pan with olive oil or butter. If you are working with a pizza stone, dust it with flour or corn meal. Get your chocolate chips and let’s go on to shaping our pizza dough.

Shaping the dough

Wet your hands and pick up the dough by the thick edges. Work your hands around the edges, let the dough hang down while you go around the dough’s edges a couple of times. When the dough has stretched to about 6″ in diameter, go ahead and place it in your prepared baking dish.

Press the dough with your hands to stretch it further until it fills your pan or stone. This will make a 14″pizza crust. Be patient with the dough, it might resist stretching initially. Wet your hands as needed to prevent sticking.

Assemble the smore’s pizza

Spread the date sugar/butter mixture on the pizza dough, leaving a one inch margin for the crust. Sprinkle chocolate chips over the top.

Now, preheat your oven to 500F. This gives the dough some more time to rest before being heated. Bake for 20 minutes and then broil for an additional minute or two. This gives your pizza a true smore’s like flavor. It chars the chocolate chips just a bit, as if your actually eating a fresh off the fire smore. It’s to die for 😍

Drizzle your marshmallow fluff over the top, transfer to a cutting board (if using a cast iron) and serve. Guys, this is seriously so amazing! I hope you all love it as much as we do 🙂

Ingredients
  

Pizza Dough
  • 600 g all purpose flour organic, unbleached
  • 500 g water
  • 1/2 tsp dry active yeast
  • 2 1/2 tsp sea salt
Toppings
  • 1/2 cup butter softened
  • 1/3 cup date sugar
  • 1/2 cup oats
  • 1/3 cup chocolate chips or as desired
  • Drizzle marshmallow fluff

Method
 

Make the dough*
  1. Combine flour, salt, and yeast in a medium mixing bowl, stir to combine.
  2. Add in water and mix to combine. Cover and let rest for at least eight hours, or up to several days, stretch and fold as needed to keep the dough from exceeding the height of your mixing bowl.
Shape the crust
  1. Grease your cast iron pan or flour your pizza stone, set aside.
  2. Generously flour a clean work surface and turn out dough. Divide the dough in half, save the other half for later or use it to make another pizza.
  3. Shape dough into a ball then gently press your fist into the middle of the ball forming a disc. Pick up the dough by the thick edges and rotate it in your hands, allowing the dough to hang down, using gravity to stretch the dough. Once you've gone all around the dough twice, place the dough into your greased cast iron skillet or dusted pizza stone. Stretch the dough to fit your skillet.
Add filling
  1. In a small bowl combine softened butter, date sugar, and oats.
  2. Spread this mixture onto your pizza crust, leaving a 1 inch margin around the edges for the crust.
  3. Sprinkle chocolate chips over the top.
Bake & Broil
  1. Preheat oven to 500F. This gives your dough some time to rest while the oven heats up.
  2. Bake for 20 minutes. Then broil for 1-2 minutes more. Watch your pizza carefully during this time as broilers vary and can quickly burn the pizza. A little char is okay, and actually lends a more fire cooked smore's taste to the pizza. The crust should be golden brown.
  3. Remove from the oven and drizzle marshmallow fluff over the top. If using a cast iron skillet, transfer the pizza to a cutting board and slice into eight portions. Enjoy!

Notes

We often make the dough days in advance to have on hand when we want this smore’s pizza, breadsticks, or our dinner pizza’s. Store dough in the fridge until you are ready to use it. The dough can also be frozen in an air tight plastic bag for up to three months. Let the dough return to room temperature before shaping and baking. 
Wet hands when working with the dough to prevent sticking.
