Easy From Scratch Breadsticks Recipe

These breadsticks are so simple and easy to make. They use my lazy baker pizza dough to give you the classic chewy bread you love. Plus this recipe makes enough dough for both a pizza and these breadsticks. Topped with some garlic butter and fresh mozzarella cheese, you’re family will thank you for making these.

Ingredients for Breadsticks

For the dough you’ll need:

  • All purpose flour, organic and unbleached
  • Sea salt – we love Redmond’s Real Salt. The salt is packed with nourishing minerals and so delicious.
  • Yeast – instant or dry active yeast. You can also sub this with some sourdough discard, about 1/4 cup. Just reduce the water a smidge if you go the sourdough route.
  • Water

For an in depth look at this dough recipe, check out this post. I like to make this dough in advance and let it sit in my fridge until I’m ready to bake it. Seriously, it’s one of the laziest dough’s you’ll ever make.

For the garlic butter:

  • Butter – grass fed will be the most nourishing but it’s so expensive. If you can afford it get it.
  • Garlic – just a clove or two minced up and mixed in with the butter
  • Parsley – it makes the breadsticks look pretty 😀
  • Salt– just a pinch, again we love Redmond’s.
  • Mozzarella cheese – we buy our cheese in blocks and shred it ourselves. Freshly grated parmesan cheese is also soooo delicious on these breadsticks.

For a more garlicky flavor, you can take that garlic butter mixture and divide it in half. Knead one half into the dough (don’t worry if it doesn’t fully incorporate. Would you complain about a bite of bread bursting with garlic butter goodness???) And then add the remaining garlic butter on top of the dough. Increase the amount of garlic based on your hearts desire.

How to make breadsticks

First, you are going to make the dough. Mix together flour, salt, and yeast, then add water. Stir until fully combined and then allow it to rise for at least eight hours. If you plan on making the dough and baking the breadsticks the same day, start the dough first thing in the morning. The longer ferment time gives these breadsticks greater depth of flavor.

Once the dough has risen and been divided, shape the dough into a ball and cover with a towel. If you want to add the garlic butter to the dough do that now. Let it rest for thirty minutes before shaping.

Prepare an 8×8″ or 9×9″ baking dish by greasing with butter. Gently roll or press the dough out to fill the baking dish. This is a wet dough, working with wet hands will prevent the dough from sticking. For that reason I prefer using my hands with this dough instead of the rolling pin.

Be patient with the dough. It may resist stretching at first.

Once the dough is shaped to your baking dish, spread the garlic butter mixture on the dough and then top it off with a sprinkle of mozzarella or parmesan cheese. Cover the baking dish and preheat the oven to 450F.

Bake for 20 minutes or until golden brown. Serve warm with your favorite marinara sauce.

Ingredients
  

For the dough
  • 600 g all purpose flour organic, unbleached
  • 500 g water
  • 1/2 tsp yeast
  • 2 1/2 tsp sea salt
Garlic butter
  • 1/4 cup butter softened
  • 2-3 cloves garlic minced
  • 1 tsp parsley dried
  • 1/4 cup parmesan or mozzarella freshly grated

  • 8×8 baking dish

Method
 

Make the dough
  1. Add flour, salt, and yeast to a medium sized mixing bowl. Stir to combine.
  2. Add water to the flour mixture and stir until fully incorporated and sticky dough forms.
  3. Cover and let rise 8 hours. See notes for make ahead option.
  4. Generously flour a clean work surface and turn out the dough onto it. Divide the dough in half. Save one half for later or use it for a pizza.*
  5. Shape dough into a ball and gently press down the center with your fist to form a disc. Cover and let rest for 30 minutes if possible.
  6. Grease an 8×8" baking dish with butter, set aside.
Make the garlic butter
  1. In a small bowl mix together softened butter, mozzarella*, minced garlic and parsley.
Assemble the bread sticks
  1. Uncover the dough and pick it by the thick edges and rotate it in your hands, allowing the dough to hang down, using gravity to stretch the dough. Once the dough is about 6-8 inches in diameter, place the dough into your greased baking dish. Press the dough to fit your baking dish.
  2. Spread the garlic butter mixture over the dough evenly.
Bake the breadsticks
  1. Preheat oven to 450F. This gives the dough some time to rest before baking.
  2. Bake for twenty minutes or until golden brown.
  3. Cut into eight sticks and serve warm with your favorite marinara sauce.

Notes

*To make the dough ahead of time, make the dough through step 2, then cover and place in the fridge until you are ready to bake it. It’s good in the fridge for a week or so. When you want to bake the dough, allow it to warm up to room temperature before shaping in your baking dish. 
*You can omit the mozzarella from the garlic butter mixture and instead sprinkle it on over the dough after you’ve added the butter. 
*Substitute the mozzarella for any cheese that you would like. Cheddar and parmesan make great additions to breadsticks. 
* This is a wet dough, to prevent excess sticking, wet your hands before handling the dough. 
*The other half of the dough can be thrown back in the fridge or frozen in an airtight bag. You can use that dough to create a yummy pizza for dinner to go with these breadsticks or an indulgent (healthier) smore’s pizza for dessert.
